Turkish Poached Eggs (Cilbir) Recipe

This is a pure Turkish breakfast egg because we use Turkish spices and Turkish/Greek yoghurt. Make sure you get real thick good quality Greek yoghurt with minimum water content. If you use regular plain American yoghurt, result will not be the same.

We top the yoghurt with the poached eggs. Then we pour the most amazing sauce, browned butter with red pepper flakes and dry mint. This butter sauce we use in many other dishes too

Ingredients
  

  • 2 eggs
  • 1 liter water
  • 2 teaspoons fresh lemon juice or white vinegar
  • 1 cup greek yoghurt extra thick yoghurt with minimum water
  • 1 clove garlic peeled and crushed
  • 1 teaspoon kosher salt
  • 1 tsp Turkish red pepper flakes
  • 1 tsp dried mint
  • black pepper
  • 2 tbsp unsalted butter
  • 1 tbsp extra virgin olive oil

Instructions
 

  • In order to bring cold yoghurt into room temperature, remove yoghurt from the refrigerator . Crush garlic in salt and combine it with yoghurt and set aside.
  • Start to boil water in a medium saucepan, we will poach eggs in this pan. When water is boiling, we are ready to poach the eggs. Crack the egg in a small bowl. Add lemon juice or vinegar to the water before adding eggs. Then gently add egg to the boiling water. Turn the heat down because water should be boiling gently not too much. If you have room in the pan, add the second egg too. Make sure 2 eggs do not stick to each other, move them away. Eggs should be done in 3-4 minutes. Egg whites will be cooked, yolks will be runny inside. Remove them from the water with slotted spoon and put it on a plate with paper towel to remove the extra water.
  • Start to melt butter in a small pan and cook it until butter changes color, do not burn it. Then add mint and red pepper flakes. It will foam up fierely. Turn the heat off
  • Divide yoghurt into 2 plates for each egg. Top each of them with eggs and pour the spiced butter around the yoghurt like in the picture. Top it with some fresh dills., Serve with toasted bread

Instructions
 

  • Roast eggplants and peel the skin and mix the eggplant with other ingredients in the food processor.
  • Add mix to your serving plate and add extra virgin olive oil and salt if needed
  • Add coriander if you like it

Muhammara Dip Recipe

Amazing, delicious and healthy dip recipe that you can use in your dinner parties. Naturally vegan and gluten free. This is a popular recipe all over Middle East and especially good companion in the Raki dinners as meze. We combine roasted red pepper with roasted walnuts. Then we add pomegranate molasses which can be found in Middle Eastern grocery stores. If you can find please also add pepper paste which is also popular product in Middle Eastern grocery stores. All you need to do is some grilling and mixing ingredients in the food processor. Some ingredients like cumin and tahini is optional, so add these ingredients if you really like them:) If you have grill roast red peppers there or bake them in the oven. You can also buy roasted peppers from the store. If you do not have time to roast walnuts, you can add them raw. It will still be delicious

Muhammara Dip Recipe

Ingredients
  

  • 3 big red pepper
  • 1 cup walnuts
  • 1/2 cup breadcrumbs
  • 2 tbsp extra virgin olive oil
  • 2 tbsp pomegranate molasses
  • Juice of half lemon
  • 1-2 tbsp tahini optional
  • 1-2 tbsp red pepper paste
  • 1 tbsp red pepper flakes
  • 2 cloves garlic
  • 1 tsp cumin
  • salt

Instructions
 

  • Grill red peppers and peel its skin. If you do not have grill you can grill them in the oven: 15 minutes 200 F. You can also buy roasted pepper if you dont’ have time
  • Roast walnuts at 175 F until they change color. But you can also use walnuts raw
  • Just bring all ingredients in the food processor (not blender) and serve

Ingredients
  

  • 3-4 zucchini
  • 1 small white or yellow onion
  • 220 grams 220 grams feta cheese or manouri cheese
  • 2 tbsp Parmesan cheese, grated
  • 1 tbsp chopped fresh flat leaf parsley
  • 1 tsp chopped fresh mint
  • 1 clove garlic minced
  • 1/4 tsp grated lemon zest
  • 1 egg beaten
  • 1 1/4 cups fine dry bread crumbs
  • 1/2 cup olive oil mixed with 1/2 cup canola oil -mint yoghurt sauce.
  • Mint yoghurt sauce
  • 1 cup plain Greek yoghurt
  • 2 tsp extra virgin olive oil
  • 1 lemon juice
  • 2 tsp chopped fresh mint
  • 1/2 tsp dried mint
  • salt and pepper

Instructions
 

  • Grate zucchini and onion, add salt, put it in a cheesecloth and wait it for 30 minutes on a colander.
  • After 30 minutes squeeze extra water as much as possible
  • Add cheese and mix
  • Add all other ingredients except bread crumbs and eggs
  • Add 1/4 cup bread crumbs and 2 tbsp beaten egg..You can use more bread crumbs or egg depending on your texture ..If mixture too sticky add bread crumbs and if it is too dry add more egg.-Mix it all..
  • Divide the mixture into 12. Roll each piece in the bread crumbs
  • Heat the oil and fry each piece until each side changes color .
  • To make the yoghurt mint sauce: Fold all ingredients except dried mint to yogurt , we do not mix it ..then add dried mint at the top..Bon appetite .

Turkish Meat Flatbread-Lahmacun-Recipe

Lahmacun is one of the dishes that we out in kebab restaurants. It is not very typical home food since we can find it everywhere easily and cheap.

But if there are no kebab restaurants around and want to make it at home , this recipe will give you kebab restaurant taste and quality.

We basically mix ground beef with tomato, peppers, onion, garlic, parsley and herbs and add this mix to the dough and cook it in the non-stick pan

You can make the mix couple hours ahead

You can make the lahmacun into smaller sizes too as mezes

Turkish Meat Flatbread-Lahmacun-Recipe

Ingredients
  

  • 500 gr ground beef
  • 1 onion
  • 2 cloves garlic
  • 1 bid red pepper
  • 2-3 cloves green peppers mix with different kinds
  • 2 tomatoes
  • 1/3 bunch parsley
  • 1 tbsp tomato paste
  • 1 tbsp pepper paste use extra tomato paste if you cant find this
  • 1/4 cup vegetable oil
  • 1 tsp paprika
  • 1 tsp cayenne
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp black pepper
  • 5 cups flour
  • 2 cups water
  • 1 tsp salt

Instructions
 

  • Puree onion, garlic, peppers and tomatoes in a food processor
  • Add parsley and keep mixing all ingredients in the food processor.
  • Put ground beef in a large mixing bowl. Add pureed vegetable mix to the beef.
  • Add rest of the ingredients: Tomato paste, pepper paste( if you have), vegetable oil, salt, pepper, cayenne, paprika and red pepper flakes. Mix all ingredients with hand. The mix will be very watery, dont worry. This is something we want. If your mix is dry add oil or water.
  • Keep the mix in the refrigerator until you are ready to make the lahmacun. You can make this mix couple hours ahead.
  • Mix salt, water and flour and knead well. Divide it into 8-9 pieces, each piece should come about 90 gram or so
  • Rest the dough at least 20 minutes.
  • Roll each dough as thin as it can get, make sure it is not broken and add the mixture with your hands.
  • Heat large non-stick pan and add the dough into the pan and cook it at the low heat about 7-8 minutes until everything is cooked
  • Serve it with parsley, onions and lemon

Turkish Yoghurt Soup with Mint Butter (Yayla Corbasi)

One of my favorite soups that my mom used to make for us. Super delicious, healthy and easy to make.

Make sure you use good Greek yoghurt with less amount of water

Turkish Yoghurt Soup with Mint Butter (Yayla Corbasi)

Ingredients
  

  • 6 cups of water you can use meat, vegetable or plain water
  • 1/2 cup rice washed and drained
  • 2 tsp salt
  • 2 cups plain Greek Yoghurt
  • 1 egg yolk
  • 1/2 cup milk optional
  • 2 tbsp unsalted butter
  • 1 tbsp dry mint
  • 1 tsp red pepper flakes optional

Instructions
 

  • Wash rice with warm water and drain
  • Mix rice, water and salt in a pot and cook it on medium heat until rice is cooked through
  • Mix yoghurt, egg yolk, flour and milk (if you are using)in a bow. Mix very well.
  • After rice is done, start to add some of the warm water to the yoghurt mix. Start very slowly to make sure you do not heat yoghurt mix to quickly.
  • Add yoghurt mixture to the pot slowly and cook this mixture 10 minutes at low heat
  • Melt the butter on skillet and add dry mint
  • Add this mint butter to the pot
  • If you are using add red pepper flakes to the pot
  • Serve hot

Cauliflower Casserole with Yoghurt Sauce

In Turkey we use yoghurt as part of many sauces. We also cook with yoghurt in different dishes.

This cauliflower dish is one of them.

We boil cauliflower to soften it little bit and mix it with spring onions, yoghurt sauce topped with cheese and finish it in the oven.

Ingredients
  

  • 1 small head Cauliflower florets florets separated
  • water with salt
  • 3-4 green onions cut in small pieces
  • Sauce:
  • 1 cup plain Turkish/Greek yogurt
  • 3 tbsp flour all purpose
  • 1 egg yolk
  • 4 tbsp extra virgin olive oil
  • Garnish:
  • shredded or sliced Mozzarella cheese or cheddar cheese
  • Red pepper flakes
  • Cayenne pepper, paprika

Instructions
 

  • Boil cauliflower florets for about 2-3 minutes in the water with salt in a big pot.
  • Drain and place them in an oven dish..Add chopped green onions to the dish
  • Whisk the all sauce ingredients in a bowl and pour over the florets and green onion mix.
  • Sprinkle the cheese and red peppers on top.
  • Preheat the oven to 400 F (200 C). Cook it until the top is a light golden colour.
  • Serve with extra yoghurt

Celery Root Salad with Yoghurt Sauce

Turkish homes use vegetables more than meat. We also make lots of different vegetable salads. This recipe uses root of the celery with yoghurt sauce combines with walnuts.

It is a healthy side dish that you can eat with your main dishes. It is also served as meze.

I serve it next to Green Lentil Dish, they combine each other very well and creates a complete nutritious meal.

Celery Root Salad with Yoghurt Sauce

Ingredients
  

  • 1 medium root celery
  • 1 lemon
  • 1 cup Greek yoghurt
  • 2 tbsp mayonnaise
  • 1 tsp salt (taste and add more salt if you need)
  • 1 clove garlic
  • 1/3 cups crushed walnuts

Instructions
 

  • Peel and grate celery root
  • Put it in lemon water until sauce is ready
  • If you have time turn and cook grated celery in the saute pan 3-4 minutes after you drain it. This process will remove much of the moisture and will make celery root tastier and more digestible. But you can skip this step and still have a delicious salad
  • Combine yoghurt, mayonnaise, garlic and salt
  • Add celery root to the sauce
  • Finally add crushed walnuts
  • You can serve it with extra virgin olive oil and extra walnuts

Turkish Green Lentil Dish

This is a very easy and delicious stew that incorporates green lentil, orzo and cumin. Orzo is optional but it enhances taste of green lentils. It is one of the popular dishes at Turkish homes because it is very quick to do if you have soaked lentils a night before. We eat it as a main dish with other dishes like root celery salad. It is a protein dish without any need for meat. You can use chicken, meat or vegetable stock when you cook it. Or you can just use plain water and you will still have a delicious and nutritious dish. With plain water or vegetable stock this dish becomes a simple vegan dish.

Ingredients
  

  • 3/4 cup lentils soak in water overnight, washed and drained
  • 1 onion finely chopped
  • 1/4 cup extra virgin olive oil 50 ml
  • 1 tsp cumin
  • 3 tbsp crushed tomatoes or tomato paste
  • 1 tbsp orzo optional
  • 2 cups warm water chicken, beef or vegetable stock or just water

Instructions
 

  • Heat olive oil
  • Saute the onion with olive oil for about 3-4 minutes until onion becomes translucent
  • Add the lentils to the onion, mix it well and saute for another 4-5 minutes.
  • Add the rest of the ingredients.
  • Cook for about 20-25 minutes over medium-low heat until the lentils soften, stir occasionally.
